Did you know that this week is Food Allergy Awareness Week? And yes food allergies are VERY real and so are food intolerances, I suffer from the latter. I miss baking with the kids; I was defeated! But now I am back in the kitchen with the kiddos, and we came up with a delicious recipe.
It was so much fun to have our baking project, and they loved every minute! They enjoyed getting in the kitchen and helping to make our new FAVORITE cookie! These morsels are AMAZING, my kids go to a nut-free school and have friends with severe nut allergies so to have these Simply Delicious Morsels allow us to bake special treats to take to school and know they are safe for our little friends. When baking for others, especially those with food allergies, extra care is needed when preparing delicious fresh baked goods at home. We also keep a teal cookie jar in our kitchen to signify that the treats in there are safe and allergy free (did you know teal is often associated with food allergy awareness?)! You can never be too cautious when it comes to food allergies.
I love the fact Nestlé Toll House Simply Delicious Morsel are made of only 3 ingredients, cocoa butter, pure cane sugar, and 100% real chocolate. It couldn’t be more clear, and they are in two delicious varieties, semi-sweet and dark chocolate. These will be available nationwide in June, so get ready to get your baking on!

OATMEAL RAISIN CHOCOLATE CHIP COOKIES
(Makes 2 1/2 dozen cookies)
Ingredients
6 tablespoons hot water
2 tablespoon ground flax seeds (flax meal)
2 2/3 cups rolled oats, divided
1 cup butter, softened
1 1/2 cups packed brown sugar
2 teaspoons vanilla extract
2/3 cup brown rice flour
1/3 cup garbanzo bean flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
2/3 cup raisins
1 (9-oz.) bag NESTLÉ® TOLL HOUSE® Simply Delicious Semi-Sweet or Dark Chocolate Morsels
Flakey sea salt
Preparation
WHISK together hot water and ground flax seeds in a small bowl until smooth. Place 2/3 cup oats in a small blender or food processor and process to a flour consistency.
BEAT butter and brown sugar in a large mixer bowl until light and fluffy. Beat in flax mixture and extract. Add ground oats, brown rice flour, garbanzo bean flour, baking soda, baking powder and salt and mix until incorporated. Stir in remaining oats, then stir in raisins and Nestlé Simply Delicious Morsels. Cover and refrigerate dough for at least 1 hour.
PREHEAT oven to 350°F and line 2 baking sheets with parchment paper. Roll dough into 1 1/2-inch balls and place on baking sheets. Top each with a pinch of sea salt.
BAKE for 12 to 14 minutes. Let cool before removing from baking sheets. Makes 2 1/2 dozen cookies.
I love my cookies, but I like to add a dash of sea salt to give them that little extra.

A great gluten-free baking blend is Cup4Cup. You can substitute it for the same amount of flour called for in your favorite cookie recipes. You can get it in some regular groceries, as well as on Amazon, Vitacost.com, and health food stores. I’ve tried other gluten-free blends, but Cup4Cup is my favorite.
